Dry Reds

Cabernet FrancCabernet Franc:
Wine Description & Tasting Notes: This estate grown Cabernet Franc is unfiltered so the true characters will shine. Very ripe, round and polished with plum and black cherry fruit. It has an elegant, sophisticated spicy finish, where the flavors are neatly tapered and the tannins are fine and integrated.
Food Pairings: Almost anything from the grill, even gamier meats like venison, fresh pork or samon. Serve at 60° F

Cabernet SauvignonCabernet Sauvignon
Wine Description & Tasting Notes: An estate bottled wine Patiently aged for 2 years in a combination of French & American oak barrels. Vines for this Cabernet Sauvignon are the oldest in the vineyard at over 32 years old. This full-bodied rich wine delivers a multitude of depth and an elegant bouquet. Exhibiting many layers of complex flavors including; currant, bell pepper, berry and chocolate. Fiore is known world-wide for it’s Cabernet Sauavignon as, the first and only one from this side of the Rocky Mountains to win a gold medal in the International Eastern Wine Competition.
Food Pairings: Well matched with red meats, especially a juicy grilled barbequed steak and smoked foods. Serve at 65 F

Maryland MerlotMaryland Merlot
Wine Description & Tasting Notes: This estate grown Merlot has a soft structure and is beautifully ripe, just popping of ripe plum and raspberry flavors yet mellow, easy to appreciate the fruitiness. A rich velvety texture of chocolate and oak on a smooth silky finish.
Food Pairings: Great with a pink and juicy home grilled steak. Serve at 60° F

ChambourcinProprietor’s Reserve Chambourcin
Wine Description & Tasting Notes: This French-Hybrid grape is estate bottled and has distictive herbaceous aromas, combined with an excellent structure. Described by Decanter Magazine as “dark violet, resembling Cru Beaujolais in color and in crisp, fresh acidity.Youthful, with vibrant black cherry and plum aromas, then earth tones with truffle, smoke and mineral hints on the finish. Bears a striking resemblance to a young Dolcetto; excellent food wine”. The Chambourcin is the cornerstone wine of Fiore, and one that Mike Fiore is most proud of.
Food Pairings: Excellent with any dish that is traditionally accompanied by a dry red wine. Prime rib, Lamb, Roast beef, Veal,Roast fowl dark meat, and of course, just about any kind of steak or spicey foods. Serve at 65° F

Sangiovese
Wine Description & Tasting Notes: This estate grown wine delivers a depth, complexity and richness that showcase its great Italian character. A deep ruby color with a brilliant aroma of spicy ripe cherries that come alive with aeration. Very vibrant red fruit flavors that are bright and lively on the palate. A smooth dry palate cleansing finish with soft tannins.
Food Pairings:  Sangiovese goes especially well with pasta and other Italian foods.

ZinnavoZinnavo
Wine Description & Tasting Notes: Marylands first bi-coastal proprietarty blend. This blend is made up of 75 % Maryland Cabernet Sauvignon and Cabernet Franc with 25% Zinfandel. An elegant, robust red wine that is aged 18 months in a combination of Hungarian and Pennsylvanian oak barrels. Blended together in a single stainless steel tank and bottled without filtering.
Food Pairings: Serve with traditional Italian meat dishes, bruschetta with roasted peppers, an onion calzone, or Baked lamb. Serve at 65° F

Dry White

Wine Description & Tasting Notes: This crisp dry chardonnay has developed a delightful powerful fruit and aromatic characteristic, with crisp acidity and mineral notes that are complemented by the creamy-buttery vanilia barrel flavor components, that seem to grow with each sip.
Food Pairings: A great Seafood wine, fresh grilled fish or even broiled crab cakes, poultry, fresh fruits, white sauce pastas and mild cheeses. Serve at 45° F

Pinot GrigioPinot Grigio
Wine Description & Tasting Notes: Medium bodied with with clean aromas and flavors that are complex with nuts, minerals, white flowers and citrus with a crisp acidity. The flavors pleasingly linger on the palate.
Food Pairings: Seafood,light pastas, and Prosciutto. Serve at 45° F

 

Vidal BlancVidal Blanc
Wine Description & Tasting Notes: This French-hybrid grape has melon and peach notes and bright citrus flavors, a crisp fresh acidity in a full-bodied frame and a clean finish with just a kiss of sweetness.
Food Pairings: Spicey Foods like steamed crabs or shrimp or light pasta dishes. Serve at 45° F

Semi-Dry

Wine Description & Tasting Notes: This Rose wine is predominately made from Maryland grown Vidal grapes, blended pink with barrel-aged Reds. The unique blend adds a touch of tannin to the long crisp fruit finish. One of our most popular every-day drinking wines

Wine Description & Tasting Notes: A soft fresh semi-dry firm wine that shows plenty of bright fruit such as tangerine and apricot wrapped up in a well-balanced, medium-body frame with just a touch of sweetness
Food Pairings:  The traditional Thanksgiving dinner wine, turkey, ham, fresh vegetables, and mild cheeses. Serve at 45° F

Wine Description & Tasting Notes: Which means The Shade in Italian, named for its light oak finish. This medium-bodied semi-dry wine is made from a blend of Vidal and Seyval grapes, that impart flavors and aromas of fruit and citrus. The oak finish contributes toasty vanilia components. The perfect refreshing complement for sitting on the porch or deck with friends
